Nick Waeltz is a retail development executive with over twenty years of experience in all facets of real estate, design, construction, and facilities management. After a short stint with an architecture and engineering firm out of school, Nick spent many years of his career in the restaurant industry. Helping Jimmy John’s grow from 126 stores to around 1600 at the time he left laid a foundation for understanding how to scale development and new store openings. Nick went on to lead development efforts expanding the QSR brand Roti and then casual dining brand City Works throughout the US. In 2021, Nick joined Green Thumb Industries, a leading multi-state operator in the cannabis industry. GTI currently operates 77 cannabis dispensaries in both medical and adult-use markets in 13 states. Leaning on his prior experience in rapid-growth environments, Nick is now using his process-oriented approach to new store development to lead the GTI store development team opening new (and newly redesigned!) RISE branded cannabis dispensaries in existing and new markets throughout the country.
